Always monitor audio from your camcorder during videotaping. Your headphones are your only lifeline to knowing if your soundtrack will be usable or not.
Use the highest quality headphones that you can. A hundred bucks may seem like a lot, but how much did you spend on camera, lighting, and sound gear -- not to mention the costs of actual production!
Headphones should be closed ear, so that they block out much of the surrounding noise. Otherwise, you will confuse live sounds around you with what the mic is actually capturing. Impedance should be approx 35 to 85 ohm. Too low an impedance will result in distortion; too high and you won't have any volume. We suggest Sony MDR7506 or Audio Technica M30.
When videotaping in an extremely loud environment, try wearing a pair of high quality in-the-ear buds under a good pair of hearing protector safety muffs.

 

Learn to set levels by ear rather than by eye. Watch the actors instead of the meters.
Adjust your headphone level so that your 0 VU reference tone (-8 on the Nagra, -12 on most camcorders, and -20 on digital recorders) sounds as loud in your head as a loud telephone conversation. Like those phone calls that make you pull the handset a little bit away from your ear. But NOT rock concert, painful LOUD! Just slightly uncomfortable.
Dialogue is not the same as pure tone, so that when you monitor normal dialogue at correct record levels (around -10 to -6ish on the Nagra or -15 to -10ish on camcorders), it should sound like a pleasant phone chat. Shouts and emphasized vocals should jar you a little, but your levels should never exceed 0dB on digital audio.
